Finally, that Christmas Eve vacherin!

The biggest, tallest -- over 7" tall -- and perhaps the best dessert ever in France, that had been living in my phone for all these weeks...finally got it to upload!

From the bottom:  a base of meringue, a quenelle of vanilla bean ice cream, another layer of meringue, very fresh and full bodied raspberry sorbet, another layer of meringue with creme chantilly, fresh raspberries, slivered roasted almonds and coulis for garnish.

As I said the little girl struggling to eat hers at the end of our table, it's mostly air! (Coq le Rico, a half block away)
